Well, I haven’t been posting a lot lately, and I have no one to blame but myself (and my job and the semester starting and the need for sleep and and and….)
So instead of sitting here and whining about it and trying to explain why I’ve been such a slacker (oh, I did that oops.) I figured now would be a good time to start a new area of the blog.
So, I thought, hey, what’s something completely random that I can put here that gets away from the previous technical/design/internet related stuff I normally post one. Well, how about cooking! I know, I know. It has nothing to do with anything that you’d normally see here, but I thought, what the heck.
So without further ado:
Garlic Mashed Potatoes
Ingredients:
8 large russet potatoes
4 cloves of garlic
2 sticks unsalted butter
2 Tbsp salt
1 Tbsp ground black pepper
1 tsp ground white pepper
1 Tbsp diced white onion
Implements of destruction:
1 large pot
1 garlic press
1 beater
1 large bowl
1 knife
1 potato peeler
Take the potato peeler and mostly skin the potatoes. I like to leave a little skin on for flavor and texture, usually I only leave 5-10% of the potato unpeeled. Then take the knife and slice the potatoes into pieces about an inch per side.
Put the pieces into the pot along with 1 Tbsp of salt. Fill the pot with water until the potatoes are covered with 1 1/2 inches of water. Place on the stove and bring to a boil for 5 minutes. Reduce heat, cover, and allow potatoes to simmer on low heat for 30 min or until the pieces can be easily mashed with a fork.
In a bowl, soften butter, add ground peppers, and pressed garlic cloves. Mix these ingredients thoroughly. When the potatoes are finished strain off the any additional water and combine them into the bowl with the other ingredients.
With the beater blend the ingredients thoroughly. I would suggest several minutes of beating to get rid of any lumps and to ensure that all ingredients are thoroughly mixed. Add additional salt, pepper, or spice to taste.
Serve and enjoy.
